I tend too nose-down a little bit. I think the nose of the saddle should point at the handlebars (at least with bars lower than the seat). So, if the bars are at seat level, then a level seat is fine. If there is a significant amount of drop to the bars, then the nose must be pointed down quite a bit.

For me, I don't sit in the seat like a lounge chair. Pedalling is a pretty dynamic process, so I can hold my seat where I want it to be.

I agree with above, photos of the bike would help, otherwise we're just guessing about the rider's configuration.

Racing fit vs Casual fit?

There are other seat designs too. Fizik sells a noseless saddle. SMP and ISM have some unique designs to reduce pressure points. Other innovations with other brands too.
