Your post isn't super detailed--what reason did the shops give? It is my experience that older taperbore design Sram/Avid brakes (Elixirs, Juicys) more frequently have failed seals and do not function properly after a good bleed--and while they're rebuildable, the cost is usually not justifiable. Or could they merely not do the work in a timeframe that works for you? It is in the peak of the busy season.
If you're shopping for replacements, any Shimano hydraulic calipers work fine. M415 is a reasonable choice, their higher end brakes with ServoWave start at the Deore level.
