A quack told me that once too. I was 26 at the time. Technically he was correct, but just blaming the aging process did not provide a solution to my problem. If a quack tells you your old, remind them that you don't pay them good money for bad comedy. Insist on a solution to the problem.. or your money back!
Yeah, it does take time. How much will depend on how your body adapts.
BTW. You don't need a polar HRM. Any will do as long as it can accurately read your pulse, and the display is big enough for you to read while you are riding
