The only problem is that it's not that easy to deliberately hit a deer with your car, those deer have some really fancy footwork, and are agile enough to jump over 10 foot tall fences.
It's one of two reasons to have a snowplow on your truck.

In WI you may keep the deer/bear/turkey roadkill. If the driver who hits it doesn't want it, anyone can take it. But from experience, gutting a roadkill usually isn't pretty. I've seen quite a number of deer/bear get tagged pretty good, shake it off, and run away. Most probably die later from their wounds or disadvantage with predators.
