I understand lots of people want to keep a vintage bike stock. That would be iffy. I don't think the Crane GS derailleur would have enough inward travel to get to the big cog. The difference in modern chains (narrower, more flexible, less prominent side plates) would be my other worry with combining an old derailleur and a new chain.
FWIW: I built a 1977 Schwinn Superior with a complete mid-'90's Shimano XTR group. It's a fantastic ride.
