Why so deep? Are you in Chicago? (which would actually be a bad place for deep rims because of wind)

Personally I would go with the highest quality components I could afford though on that bike silver or black. However for me I would do silver components like a nice Sugino 75DD crankset and maybe a Nitto stem, seatpost and bar. Polished high flange hubs and maybe some polished Velocity Quills. I don't know their bikes well but it would look quite classy with the polished silver who wouldn't want that lovely deep green with a little polish to it ; )
