For the same reason I set up my 1981 Miyata 610 (pre-canti brakes) as a near full Suntour Superbe Pro bike with a set of NOS American Classic hubs.
It's undergoing another transformation as I write this; getting a Cyclone group, front and rear Jim Blackburn racks, SP dynamo hub, and an Edelux II which cost 9x what I bought the frame for. That bike has always proven to just be the right one for me, so it's getting a light touring makeover.
Why? Just because I can.
