I am medically trained so would want to engage with the dietitian on the evidence.

My insurance does cover some sessions... so ideally would look to use these, but if justified I would consider outside this with the right credentials...

Not what you asked for but since you have limited responses, I will mention that in Joe Friel's book, "The Cyclist's Training Bible', he devotes a chapter to nutrition ( "Fuel" ) in which he discusses all the things in your post. And certainly is evidence based.
