When I was done with my world tour years ago, I gave India the "best country for cycling" award. I loved the people, the food, the minor roads and many of the major ones, loved the climate. The rest areas (Parao's) had fresh water, a big basin to clean up with, available cooked food and bread (Naan), and the occasional musician or snake charmer.

Very interesting, I wouldn't have thought that would be your choice--but full caveat, I've never been in that part of the world. I have a friend who has travelled around in India and found it a fascinating place (not by bike) and I fully realize a lot of people think you'd be nuts to bike in Latin America, and I enjoyed it, especially Mexico, for many if the same reasons you wrote off India, the people, the food.
