I leave it at 100%. I've never tried experimenting with it. I like it to feel "realistic" with gear shifting and whatnot, but again I haven't messed with lower settings so IDK.
The few times I've done TTs on Zwift, I cut it back to about 70%, so you still feel the hills but the steep ones don't totally throw off my rhythm. It works well and isn't just like riding the flats. I also run it there when I do any climbs that exceed 10% for any rel distance because otherwise the trainer starts straining, trying to provide enough resistance for the combination of the gradient and my lard ass.
