Llano -> LA-NO (LA as in lack, forget about the double L making a Y sound -- somehow different than rules for Plano)
Guadalupe -> GWAH DUH LOOP
"He didn't" -> EDEN ("He didn't do it" -> "Eden do it." Also SHEDEN.)

And my personal favorite
Manchaca -> "Man Shack" !!! WTF?! That's neither right nor moral.
That's not part of Texas.

It was tough, though, when I lived near Ft. Worth and tried to convince half my high school that Monticello wasn't Monty-sell-o.
