Your intuition is correct, flipflop wheels aren't dished at all. You line up the chainrings by using the correct length bottom bracket. There's plenty to read about this at sheldonbrown.com.

Vuelta wheels are OK, but lots of people have had really good luck with the slightly more expensive stuff from bicyclewheels.com
