Being a poor country, I'd have to imagine it came from necessity to use everything and to get nutrients. I remember hearing in history class that toward the end of WWII, Russians were eating car axle grease (It was made from animal fat) and shoe leather.
This one just happens to be scrumptious. You should see the butchers expression when I ask for the pork fat trimmings.
