If you decide to go with the Nitto Technomic Deluxe(tall) or Nitto Technomic(even taller), make sure your head tube is long enough to get your handlebar as low as you'd like. I have the Deluxe on my old Bridgestone RB, and it's a pretty stem, but I need to cut some of it off to get my handlebar where I really want it.
