I assume what you're asking is, "What vintage pedals will best match the bike?"
Go with the older model Look style pedals. They've got a long enough lineage that they'll cover quite a age ange of bikes. Yeah, they're not the greatest type of cleats to walk in, but they click in very quickly (and easily) and do the job.
I'm also running SPD cleats on some of my bikes, primarily the touring models, so I can use MTB shoes that are easy to walk in. They work OK, but they're a lot fussier to get clipped and unclipped.
