Sounds like a decent enough plan but I'm curious how the shifter cables are gonna get the required stops and adjustment. The bottom bracket, brake reach and rear wheel spacing are also most likely gonna need some attention as I believe the Bianchi has a 70mm BB shell vs. 68mm for the Nishiki as well as 126mm rear wheel spacing vs. 130mm and the Nishiki likely used 27" rims vs. 700c which will affect the brake reach. I don't think it's gonna be cut and dry.....Doable but not a simple swap.
I wouldn't feel to horribly bad about taking that Bianchi apart. It will get put back together by someone and ridden.
