I then replaced the other two chain rings with the sizes I wanted. You can change the cassette to any 8 speed you prefer, and even though you will be running a double, you can keep your long cage rear derailleur. This method involves minimal expense and labor, and functions fine.
Personally, for the commuter, a triple is nice to have. There's always that time when you need to carry something that adds 20-30 lbs to your typical load, and lower gears are nice to have at that time.
