I see what you're saying, but I feel that as long as you don't ask to be fitted or anything, just request to try the bike, maybe tweak the seatpost height, and test it there is no need to feel bad or guilty. Correct me if I'm wrong on etiquette here, but unless you take up the salesperson's time, it is no harm.
