I'd build up a super weight weenie Niner Air9 carbon single speed with carbon fork. It would weigh under 15lbs. Or maybe a titanium custom 29er from Black Sheep, Jeff Jones, or whoever builds the hottest titanium frames. It would be polished to perfection and would have lots of matching polished parts including a matching custom titanium seatpost and handlebar.
