Where to get a new saddle clamp bolt and

How do I know what thread pitch?
It takes a 5mm hex and is 5cm long
I don’t want to bother my local bike shop with such a piddley little item
are typical bike bolts something that a local hardware store would have

Depends on your local hardware store, but yes, many will have what you're looking for. From your description, it's probably an M6 x 50mm. That said, your local bike shop would probably have no problem helping you.

Your local bike shop should not be bothered by helping you with this. You can always throw them a tip if you feel bad. There are too many possibilities to blindly point you in the right direction.

If you do not have the actual bolt anymore, not even a hardware store would know where to begin. If you don't want to bug your LBS, this is precisely the kind of assignment a Bike Co-op is set up to accomplish. You bring in your seatpost and test fit a few bolts until you find one that works. While you wait, on the house. Don't be shocked if the actual solution involves a new seatpost. Nominal charge. What are you waiting for?
