Which spokes?

Go with the double butted spokes. Either DT or Wheelsmith. Weight is not the issue, strength and reliability is. Double butted spokes make for a stronger wheel. Using spoke calc you get 285 and 284.5. I would go with the 284's and get at least 2 spare spokes just in case.

You've all given a ton of great input, and I think I've got it figured out now. I'll let you know how it goes! (Sadly, I may still have to wait a month or so before I've set aside enough for the hub and other components, but now I know what I need when I have enough)

Use DT double butted spokes 20/18, you can get away with thinner on front if you want. Double butted are more durable than straight gauge as the thin part lets them "give" to stress
