Suggestions on a complete frame build up

I've got a frame half built up and looking to go with a 60's theme to it. It'll be getting built up with 60's Campagnolo GS/Valentino/Sport bits.

Here's what I've got so far


Crankset - Campag Sport
Rear Derailleur - Campag Valentino Extra
Front Derailleur - Campag Valentino (looking for one with the chrome cages and polished clamp)
Shifters - Gran Sport or Bar end shifters (undecided on which to use)
Rims - Fiamme Red Label tubulars 36 hole
Stem - Early 3T

Still Need

Stem - 3T Record Stem 90mm
Bars - 3T Superleggero 42mm
Brake Levers - Gran Sport
Cable guide - Campag Downtube cable guide clamp and cable stop clamp
BB - Campag (unsure of width until frame is built)
Seatpost - Gran Sport seat post 27.2

Here's where I need your help with these other pieces. Not sure what to do

Hubs
Calipers
Pedals
Toe clips
Saddle (have a couple to choose from...Cinelli Unicanitor #3 , Brooks Pro, B17 black)
Cable housing color (full housing for brakes)
Tires (want something in the low to mid 30's)
Bar tape (not a fan of Brooks)
bottle cage

The frame will be white with a black seat tube and headtube. Unsure about font but nothing flashy.

I'm not sure I'm sold on shellac'd tape. just looking for a 30'ish mm tubular road tire. Something along the lines of the Challenge Bianca Strada. I've a couple sets of high flange Record hubs but since I'm not doing a Record build I wasn't planning on using them. Possibly high flange Tipos but what people are charging for them I'm not too sure. Never really dug Normandy hubs. I've got a rear early GS hub with the steel center and aluminum flanges that might be more correct.
