Above, plus a couple of types of sealed cartridge bearings. Standard headsets can come in different sizes, generally noted as 1", or 1 1/8", and sometimes 1 1/4" based on the steer tube outside diameter. Bearings may be proprietary to the headset, although there aren't that many sizes.
Ball bearings usually come in cages, but can be replaced with loose bearings of the same size if you wish.

The mentioned sealed cartridge bearings all contain roller bearings or ball bearings. It's also possible to put both types in the same sealed (or should it be called modular?) bearing.

You can buy loose balls, usual diameter of 5/32”, you’ll need about 24-28 per race, so say 60 total, as you drop and lose a few. Or buy them prest in a bearing race.
