I agree with 007. One is marked 73 and the other is 7-3.
The one without the dash was made on a Monday morning (after a rough weekend) and the guy forgot to put the dash in the stamper.

The only difference that I can see, that can't be attributed to either the condition of the cones or the photography, is that on the cone on the left, the date code stamp is rotated slightly counterclockwise relative to the flats. This is hardly surprising, since the grinding of the flats and the stamping of the date code were separate processes.
The date code stamps look different, but I don't believe they are. The cones look to be different sizes, but I don't believe they are.
The cone on the right is in better condition, and may be in better focus, than the other. The CAM. / 73 stamp may have been impressed slightly deeper, or perhaps the surface of the other is just smudged a bit by use.

You're onto something. And since the riding is so bad these days, this thread is the next best thing.

That dash does not look like a stamp, more like an imperfection on the metal surface that just happened to be between the 7 and the 3...

What is a climate like that called? We don't get peaches until July.

The late Art Stump decades ago advised that Campagnolo is accurate where they needed to be, and after that is is all visual hierarchy. The less often seen, the less attention paid.
He would come in from time to time with a New Record chainring, looking for a trade for one with more precisely positioned "kidney" punchouts. By the shape of the typical displacement, they were punched out back then one at a time. For him, it was extra work to correct the openings before milling or drilling them out, otherwise, there was a visual flaw to be seen, the holes appeared "off". Concentric to center but not the inside edge.
