Bikes: Panisonic Dx2000(R.I.P), Panasonic DX 5000, Panasonic DX 1000, Trek 530, Schwinn Varsity, Motobecane Mirage, other bikes that I've garbage picked or found

The seat looks older, but I don't know what year the frame is because of the picture resolution. A larger/ more detailed pic would help.

If I click on the thumbnail to expand it, I can see the block font Schwinn decal on the downtube and I know that Schwinn used that style from about 1975 or '76 up through about 1982.

It looks a bit blurry even with the thumbnail expanded. But I can see where you'd be coming from with that, and I'd be inclinded to agree.

Bikes: Chesini X-Uno, etc.....

How about going to the Vintage Trek website and checking out the Component Dates page. Assuming they are original, you should be able to figure the date of the bike by dating the components.
