He meens O riginal P oster .... you may want to look at a Carrera Volans, Red Rose handles them, other spots too. I've investigated what you have as well as others. other options are out there but I've seen the Volans, a very special bike. in Italy is way better know than here, having been there an' all

Well, yeah....but more specifically. Yes, all three are great looking, lugged steel with a legendary heritage and are reported to ride great. But a lot of bikes have that!
So some specific questions:
Do any of the brands mean anything personal to you? For example, of those three I'd go for either the DeRosa or the Gios. Because in my "glory days" those were the bikes to have and I always wanted one (Actually I went for a Mercian in part because of this reason). Pegoretti means nothing to me personally. Not to say they're not great, just that the brand holds nothing for me in my heart.
How important is a custom frame to you? Have you looked at the "off the peg" specifications to see if any are close to what you're riding now? Fit is the most important thing.
Do you look at any of those frames and say "oh - I've GOT to have one of those!"?
Is a racing geometry frame really what you want? If not - there are a lot of beautiful randonneur, touring, etc. frames available.
In the same vein, is the tubing they all use (superlight, thin) appropriate for the riding you plan to do?
Do they all have the braze-ons you want?
Is money REALLY no object? The Pegoretti is 3x the price of the Gios and 2x the DeRosa. Personally I'd have to have a darn good reason to spend that sort of money. Likewise, it looks like you're looking at a production Pegoretti vs. a custom. You could get a killer custom and have money left over.
I'm sure we could come up with 100 questions, but that's the sort of question I'm talking about.

Perdon, yo hablo un MUY poco Espanol. Non Francais. Caution - ignorant American on the loose!
What I mean is: what kind of riding do you plan to do? What kind of things do you want to carry? Do any of these frames look better than the others to you? Do any of these frames fit you better than the others?

Soon Iīll send the Tommasini at France , fort this reason I īm looking for another steel lugged frame
I donīt understand that ( What kind of things do you want to carry? )
riding is the only one I like agressive, the fit is good with a 56.5 cm top tube lenght, the Gios look I like , now also the Mercian , you are guilty, LOL.

Seriously, and my Gios (Compact from 1990.) I'm comparing to Litespeed Solano I just acquired and trust me, they are two different animals. For lively, heightened sense ride, I gotta hand it to Gios (Litespeed has its own merits but is beyond what is discussed here).
Last, one guy on this forum, a former racer, described Gios as "ultimate bridging gap machine". I tend to agree.
