I tried the string test on the frame and it looks very straight. I think the problem is with the fork. Its subtle but it looks like one side has a little less rake than the other. A buddie (we did a quick 40k ride, what weather!) thought the front wheel was leaning very slightly to the right.
I think I'll take the fork off and lay it on the marble counter with a large piece of lined paper underneath. I should be able to take some measurements that way. I can cobble up a tubing bender fixture in the woodshop.

Get a SRAM PC870 chain. You'll love the improved shifting, also re dish the rear wheel correctly. If you want a decent new freewheel, get an IRD.

I put on an "8 speed" chain from my LBS and it is much quieter. The rivets are flush on the sides of the chain and it is much easier to find a chater free spot between shifts. I can't tell if it shifts better, as it wasn't really a problem before.
Regarding the "hands free" problem, I'm sure that the front fork has a little lateral twist to it (not the usual "smushed in the nose" problem). I need to create a wooden fixture that will let me "adjust" it without damage.
