The Handsome Devil has a very short top-tube for using with flat bars so look into that measurement carefully to be sure it will work for you.
You didn't specify a budget but the Salsa Marrakesh and Surly Ogre both might fight the bill. I converted my 3x drivetrain to a 1x with no problems and I'm running it on my Karate Monkey, which is almost identical to pre-2017 Ogres.

So just an update on this:
I ended up going with the All City Pony Express. I was able to find one to test ride, and I just immediately had fun on it. The only surprise is that I ended up fitting on a smaller bike than I expected (55cm vs expected 58cm), but that's all fine and dandy, because now I can share it with my wife if I need be.
Now my only problem is that it looks like my new commute is going to be too short to really cut loose.
I ended up going with the All City Pony Express. I was able to find one to test ride, and I just immediately had fun on it. That looks like a nice bike and the All City bikes have good write ups. It was on my short list to look at, but I couldn't test ride it. I hope you have lots of fun and safe miles on it.

All three of these bikes have the features I'm looking for, and should be able to be purchased in my area when I move. Both Surly and All-City are QBP brands, so I can order them through a lot of bike shops, and handsome offers direct retail.
I'm moving to a really dry place, so I figured that the advantages of disc brakes in some conditions aren't going to outweigh the advantage of knowing how to work with cantis.
