Which disc brake bike for NYC winter/rain commute?

Which disc brake bike for NYC winter/rain commute?
I need help deciding which bike to get. My budget is 600 but cheaper is always better since in NYC you never know when your bike will get stolen. I need an extremely durable commuter/hybrid/road disc brake bike with puncture resistant tires (so if the bikes I list don't have them add 100 more for cost unless the tires come in 32mm because then I'd just get stopflats) and the ability to add fenders easily.

I had my mind set on the first bike because of the price, the ability to add non-carbon fork fenders, which are much easier to install and has more protection, and the looks. But I heard bad things about mechanical disc brakes and carbon forks have a much nicer feel on the road than aluminum. In the end I'm just looking for the best bang for buck deal on here but I don't know what that is because I'm a newbie biker who doesn't know anything about components.

Fit is important, too. This is why most seasoned/experienced riders will advice against mail order.
Lots of shop in NYC, pretty sure you'll find one or two models that will fit your requirements. Some
of them offer used bikes; all will offer a warranty and free tune-up after a few weeks.
Recycle a Bicycle will build you up a (used)bike if they don't have your size in stock:

I'm partial to folding bikes since I live in a tiny apartment. I like/trust BFold on 13th st:

If theft looms as a large risk, consider Citi Bike. Do you live and work in the service area? It's about $155/year, which is an insanely low rate if you use it often.
