Disregard the mac & cheese and tuna, and help me with some ideas for some meals that are easily packable, full of carbs and energy, and will stay good for 3-4 day maximum. I would really like to get more variety into my meals when traveling self supported by foot or bike.

If I wanted to turbocharge the above recipe for endurance sports I'd add a bit of sorghum molasses. From an overall health standpoint adding simple sugar isn't the best idea, but to get the effect for short bursts of energy it's effective, and won't kill you.
As for protein (that component which nutritionally illiterate people assume is the bane of a vegan or vegetarian diet) it's easy. Proteins are nothing but chains of amino acids. There are any number of complete proteins from plant sources. Beans/whole grain combos are complete. You can make it packable by doing bean spreads and putting them in whole wheat pita or other pocket breads. Lately
my favorite is the azuki spread I mentioned earlier. I'll post the recipe when I retrieve the book from my fiance's house. Tofu/tempeh dishes are good too. I like marinated tempeh, because it's dense, portable, and relatively dry (I don't have to worry about it leaking into my panniers).
Other fun things to pack are roasted brussels sprouts (roast them in olive oil at 400 degrees for about 25 minutes), popcorn, various kinds of nut butters (plenty of recipes out there, I could post some if you like),
and for the irredeemable junk food junkie Tings (the vegan version of the Cheez Doodle).

In a related note, I find that eating a steak before a long ride is a poor idea. So I guess I am a vegan before a ride. I ate a bowl of cereal this morning for breakfast in fact that had only a little meat in it, so I don't know if that counts. Kellogg's Frosted Meaty Flakes, or something such as...
But no, I like lettuce. Zaxby's is really good too... and Popeye's... and Fuddruckers...

I asked that only vegans reply and have had mostly a bunch of $%#@tards who want to take a swipe at my way of life. This is par for the course, as almost any time vegansim is mentioned anywhere, it is met with hostility. For those vegans who have replied.......YO!

Anyway, I'm surprised nobody has mentioned Brendan Brazier or his vegan athlete nutritional supplement "Vega".

Being a bit of a protein junky myself, i use it in place of the more traditional carbs like rice or orzo.
Actually something that I have started making for her is that I stir fry up chick peas in a bunch of middle eastern spices (Cumin, Zatar, schwarma, etc...) and toss them over a bed of quinoa. She likes it.

The car free forum would be a good place for questions as well. I think quite a few folks over there are vegans and, being car free or car lite, I'm sure they know some tips on staying fueled up and avoiding animals products in their equipment.

Vegan commuter here, also about 20 miles daily round trip.
I've been vegan for about 5 years now, vegetarian for almost 10. Still in great shape and competing in triathlons so I must be doing something right... =)
