Get a grip (handlebar)

Hello

I am asking for help/advice with my windsor 3 speed, used for commuting and errands. It has swept back bars with spongy hand grips. When riding at speed, rolling over road bumps causes my hands to literally fly off the bars. I'm not sure if this is a fit, positioning issue, or my grips are too spongy.
I'm fairly new to riding in the upright position and would appreciate some feedback.

Thanks.
