I don't think I have to explain why I'm looking for a more secure way to transport a banana in a backpack.

On the United Fruit Fleet they purge the Oxygen out of the ship's hold to stop Oxidation
and kill bugs, replacing O2, with Nitrogen, N2.
And are shipped pretty Green .. You can buy them green and ripen them at work..

As this was asked here in Commuting, I'm going out on a limb and assume that you are trying to figure out a way to transport a banana from home or store to work or school. A practical solution would be to make friends with someone who drives a car and who can bring in a bunch of them as needed (paying them back of course). One less thing taking up space in your <insert bag of choice here>.

To answer the question though, have you tried using a plastic kitchen container (with the click on lids). There should be a good banana sized one at your local discount store for a couple of bucks.

Buy them slightly unripe; they're very much tougher then.
For me, I can take them in a back pack no problem, so long as they sit on top.

I disagree with you. Bananas are a good source of potassium. In a hot, dry day they help avoid cramping. There are ways to keep down the amount of sugar in a banana.

I have never had much trouble with this, either in a backpack or in panniers. Think about the physics of the situation and apply yourself, or provide mores specifics about this serious problem.
