My hybrid is a 1x9 and is great. There are occasions where more gearing might be swell but honestly I don't mind too much. It is super simple and extremely reliable. Old early 90s XT rear derailleur mated to a 11-32 9 speed cassette and a 38t Race Face Narrow/Wide chainring and an old XTR 9 speed shifter and almost no problems.
1X11 would be even better for the road bike and it looks like the gearing you have chosen will work quite nicely for mostly flat stuff. The hybrid is not designed for speed or anything but mostly utility and to have something I can lock up without as much worry. The bike is certainly covered in nice parts but it is all kind of stealthy or older vintage stuff rescued from parts bins or traded or bought very cheaply or some stuff was given to me.
With Shimano Ultegra RX, all the ScRAM 1x stuff, great wide range cassettes and a ton of great 1x chainrings it is so easy to do it these days. I am not saying however that 1x is great for everyone and you should always talk to your mechanic before starting a 1x regimen but it can be quite fun and maybe a little liberating in some senses.
I also have two 1x1s aka single speed/fixed gears and love those as well but I have a 3x on my touring bike and Klein MTB and a 2x on both of my road bikes.

Really thanks all. Really good info in this thread. I am doing the 1X. As soon as the frame arrives I will start working on the exact group I want. Been on sram website for about 4 hours it seems.
