Every time I ride I try to do an overspin drill to limber up and check my form. I try to get as high a cadence as I can while still being as smooth as possible. I consistently hit 165-180 for a few seconds in a 39/19 or 21.

Bikes: I never learned to ride a bike. It is my deepest shame.

I have a video my wife took of me on my rollers last year and doing a timed count I was slightly over 200 RPM for several seconds.

Yup. Got to meet Levi one day last year and someone asked him about spin. Asked him if it was better to spin a small gear or mash a big one. His answer? "Better to spin a big gear"

Why do they spin on those rollers? Does it raise they're rpm?

It improves your spin and cleans up your pedal stroke, dramatically. You will learn to ride smoothly.

Also raises heart rate, you can spin some amazingly high gears on the rollers due to lack of wind resistance. Back when I was racing we used them primarily for winter training. We used to have roller races in the local mall, nothing draws a crowd quite like the whine of rollers at high speeds.
