105 has better seals in the hubs and ball bearing thrust washers in the calipers. RX100 is nice, but 105 is superior in several ways.

If it's any help my '85 760 will swallow 700 28s with ease. This is a very nice frame. Don't be scared of the steep angles, they ride like a Cadillac. If it were a 58 I'd have another one on the way.

In my experience you'll end up using the same length spokes regardless of which hub you choose. There might be small variations in flange dimensions but not enough to need a different spoke length....
