My philosophy of cooking is just basically to fill the hole, fill the empty stomach. All the chopping and slicing and sautéing and whatnot is exactly what I try to avoid.
For example, I whip out a pork chop, or chicken parts, or steak, sprinkle with salt, pepper, and spicy paprika, throw it under the broiler and boom, it's done in 10 minutes. Of course I steamed a chopped head of fresh broccoli, takes minutes. If I want to add a starch to the meal, hopefully there's a pre-cooked sweet potato that I just need to zap in the MW for 90 secs and boom, meal is done. Put a pat of butter on the hot broccoli and the hot sweet potato, sit down and eat it.
I WILL chop some fresh garlic for broccoli raab or fresh spinach or swiss chard, but for most other things it's powered garlic or powered onion or pre-prepared rub (made fresh by the wife).
However I will admit, some of Heathy's recipes sound quick if you pre-prepare stuff.
I get it, many people love the creativity that cooking offers and enjoy spending the time to create something different. However I prefer to make meals and meal prep as quick as possible so I can get to other things that I enjoy much better.

We stopped to get good coffee from the local coffee roaster. We're in a condo rental so can make buckets of hot coffee...
Stopping half way up to Tahoe in Bishop. Gotta get some strudel & bread at the German bakery and then some smoked meats & a sammich at the smokehouse. Mahogany Meats, how's that for a delicious sounding name?! Even @LAJ would like the place. Why? On account of them having smoked turkey.
Along those lines, what do I get for lunch? Pastrami, Swiss and mustard on rye??? Or turkey, bacon and mayo on sourdough??? Mr H will go for ham, cheddar, and tomato on whole wheat I'm sure...

Here's one of the most impressive birds on the planet, definitely the fastest, the Peregrine Falcon. As this shot shows, it's hard for the camera to keep up with him. That's the sharpest I could get him.
I have some shots where he's on cruise control, just gliding by, not flapping, and he's so fast I can't get the camera up on him and focused before he's already past me. It clearly seems like about 70mph, just gliding. Awesome bird.
I'm really happy that I've found a reliable place to spot this guy just 60 miles from home. Sooner or later I'll get an excellent pic.

I used to make that bread all the time. The original recipe for this bread was, I believe, a Mark Bittman recipe from The NY Times.
He called it No Knead Bread.
I used to make the Cooks Illustrated version, Almost No Knead Bread. As in I made it every week or so for a couple of years. White, wheat or rye. It's good stuff. Freezes well.

Speaking of new groups, I ordered a new Red left brake/shift lever yesterday. I just wasn't happy with the prospect of taking the damn thing to a watch maker (joke alert) to have the broken lever replaced, even though the part is readily available on eBay. I found a good closeout on the single left lever in the right graphics edition for $209 with free shipping and no local tax. Good thing this happened when it did as that graphics edition is obsolete now, and it seems to be rapidly disappearing from the internet. It seems they change the look every couple of years.
I doubt that is much more than I would have had to pay for the part and replacement labor especially if I let the LBS search for the right part. I mean, was the LBS really going to just go on eBay to get the part? Maybe I am just a klutz, but the replacement job looked to be a bear.
What about the warranty you ask. Well the store (both online and brick and mortar) where I originally bought the lever offered to ATTEMPT to process the warranty if I sent the broken part to them. Know what? I just don't have the patience for that.
So do I still come out ahead compared to just having bought the levers from my LBS at whatever awful price they would have charged? Good question. Maybe a little. I wonder how the replacement would have been handled assuming the breakage would have been determined to be under warranty. And that is by no means a given. How would they have gotten me a matching lever from SRAM? Would they have replaced both to make a match? I have no idea. Channeling Scarlet O'Hara I am just not going to think about all that anymore. Previsualizing reinstalling the internal cable run is much more important.

I broke a nipple today and plan to replace it myself.
Is there anything specific to look for to match the existing nipple?
Alloy, black, fits 2mm spoke, size B spoke wrench compatible. What else?

I used bread flour this time, but snagged some whole wheat while I was at the store. Any adjustments necessary when using that stuff?
Now I need to find a pumpernickel recipe.
