You will hear and see a lot of stuff but without Greg actually saying what he rode it's difficult to tell.
A mechanic that worked in Europe at the time told me that the steel bikes that Greg rode were all Della Santas from Rolland's shop in Reno, NV. You can still get Roland to build you a custom for a pretty reasonable price. http://www.dellasanta.com/
The Gitane and Bottechia steel bikes were said to be rebadged Della Santas but I had an ADR Bottecchia and it was EASILY a good enough bike to have been ridden by LeMond. Greg DOES have extremely long femurs and hence needed custom bikes so the Della Santa story is probably accurate. For climbing LeMond was always experimenting. Many of the Gitanes he rode on climbs were Vituses that were bought by Gitane who sold them all over the world as Gitanes.
Greg also rode TVT's which looked something like a Vitus but had carbon tubed with external lugs. These bikes were too soft for anything but climbing and they weren't properly insulated in the lugs and would soon develop electrolysis white spots around the lugs signalling imminent failure at these points. NEVER buy a TVT that doesn't look absolutely new and never ride one in the rain or get any water on the lugs.

Craig Calfee is an OUTSTANDING bicycle producer so don't let a bamboo bicycle throw you off. The fact is that they're stronger for their weight than just about anything else except carbon fiber.
