Why Bibs?

Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Never been an issue for me in 30 years of riding, but I'm only 170-ish.

Bibs completely eliminate the possibility of that happening.
This is true. In the "old days" jerseys were cut long and overlapped the shorts. Now they're cut short with a waistband so shorts can have advertising on the butt without getting covered up. Glad I still have a few old school jerseys.

At least I am cool until I finish my ride and then the sweat pours off me. My only hesitation is wrecking w/o a shirt. I would rather my first layer of skin to be my shirt. In October when it starts to cool off around here I will put the shirt back on. I will be glad when it is cool enough to do so. 100+ days suck and I am a born and raised Texan.
Sounds like you need to invest in a good jersey in addition to bibs. They're super light-weight, wick sweat away from your skin to keep you comfortable, provide a bit of evaporative cooling if the wind is blowing, and the pockets allow you to keep food an other essentials easily available. Much different than the cotton T-shirt you've probably been riding with...

Newb question on bibs. My friend who sold me my Cannondale r2000si also gave me a Cannondale Jersey and matching bibs. I assume I wear them together?

I wear bibs to keep my shorts from sagging in the crotch.

Ever try to get on the saddle with shorts sagging? They will get caught on the nose of the saddle.

...and once you try skinsuits, you'll never go back to bibs.

I'll 2nd this, and I live in Houston.

True that! My body naturally runs hotter than most so in turn my balls sag lower than most clothes are designed for, the Performance bibs I have hold them up so nicely...

I see the topic of bibs has fired up the BF TMI machine.

I know I always look for that "Designed With Extra Room for Your Balls" tag when I buy shorts.

I have shorts I like, and bibs I like. I also have shorts and bibs I don't really care for. My favorites in both categories are my favorites because of the pad (style, size, thickness, location), not because they are shorts or bibs. For bibs, I do like the fact that I can wear a normal Dri-Wick tank top or T-shirt and not have to worry about showing crack, but I also have some shorts (PI) that are much higher in the back and they eliminate that issue as well.
