10-speed wheel on 11-speed bike for trainer-use only?

I live in an area where there are a number of winter days you can get outside to ride, but there are lots of other days where due to weather or darkness you're stuck inside on the trainer.

New bike runs Ultegra 6800 11-speed.

I have a spare older Open Pro wheel with Ultegra 8-9-10 speed hub. I have spare cassettes in both 10 and 11 speed.

Is there some way I can set up that wheel to be used with on my 11-speed bike? Makes it easy to mount an old tire on the trainer wheel then just switch out wheels when weather and schedule lets me get out.

Have a look at this, not tried it myself, but sounds like an option Ask a Mechanic: Mixing 10-, 11-speed parts

That's awesome. Thank you. Might not even need to worry about the inner limit screw since I never use those lower few gears when on the trainer.
