Salsa Casseroll Single can be had for $600. No need for any immediate upgrades. The color can not be changed, so I guess it is out of the running.

Salsa Casseroll. I am 6'4'' and this is what I commute on daily. It meets all of your requirements. It is more than $500; not by much and well worth it. I truly love this bike.

This is my daily commuter. I ride it fixed 5.5-6 miles to and from work. Can go on a 20+ mile ride without any issues. Great do-it-all bike.
