If you can do it, you'll have to use a lockring from a 11t cassette. The chain will skip using the lockring from a 12t cassette

IMO, this is a good deal. You get a lot of bike for your dollar, considering this is 105 10-speed and a carbon frame. The only part I'm not familiar with is the wheelset.

IMO the P3Rs are overrated. After 800 miles, my rears tire had the cords showing nearly the entire way around the tire. I'd only recommend them to someone for racing, but not training.
