Inseam = 78.5cm (book in crotch method)
Saddle Height = 69.3cm (measured centre of crank to top of saddle)
If you get enough responses and plot them, you will get a normal distribution curve (ah, population statistics )

There is no accepted meaning of "inseam". About half the guys seem to think "inseam" refers to the size of their slacks, about half think it is leg length from the floor to the crotch of their slacks, and a tiny 1% or so use the Rivendell "inseam" of floor to the public bone.
I'm about 5'9 1/2 inches tall, wear slacks with a 32 inch inseam, have a leg length of 34 inches to the crotch and 34 1/2 inches to the pubic bone. My saddle height is 29 1/4 inches, from the center of the bottom bracket bolt, along the center of the seat tube, up to the top of the saddle.

Average Bike inseam (floor to pubic bone)=78.6cm
Center of saddle top from pedal spindle=84.4cm
The above is a general get around town setting. It's comfortable over bad pavement.
Sometimes I jack it as much as 3cm for recreational rides.

31" (78.7cm) - inseam (measured by placing a book between my legs while standing and measuring from top of book to floor)
28.1" (71.4cm) - crank center to top of seat (in line with seat tube)

as I said, this is just a starting point, but a very good one, in my opinion.

OMG.....All the talks about bikes and all.....Not many people know how to measure their saddle height.
FYI, start from CENTRE of BB and ends at the top of the saddle along the seat tube. Inseam 86.5cm, saddle height 77cm

840mm inseam (book against wall in bare feet method)
745mm saddle height (BB centre to seat top measured up seat tube)
172.5mm cranks
seat nose 70mm behind BB centre
Note: I'm running Time RXS pedals and they have a low stack height

Loughborough University in England did a similar study in the mid 1970s; their result was that saddle height on average is 109% of inside leg. (Inside leg + 9%) The final measurement being from the pedal face to the top of the saddle.
This is useful for manufacturers designing bikes, but not for setting actual saddle height because with any average most people are above or below this measurement. It can however be used as a place to start; rather like the heel on the pedal trick.

Inseam = 80.5 cm (pelvic bone to floor)
Saddle Hgt = 73.5 cm (Ctr BB to top of saddle)
Look pedals/cleats, which effectively lengthen legs so saddle set a bit higher than would otherwise be. Still on the high side.

inseam 724mm
seat top to spindle 679mm
feels too short on platforms with sneakers but right with road shoes and clipless peds.
don't forget shoe size in the equation. My wife and I have almost identical inseams (hers may be a bit longer than mine) but I run my saddle a good inch or two higher than hers. She wears the equivalent of a man's 5 or 5 1/2 shoe, I take a size 12 (47).

Didn't Claude Genzling arrive at the 'inseam x 0.88' by checking fit of pro cyclists in the '70s and 80's?

That's what I thought. My inseam is about the same length and my saddle height is 72cm. Are you sure about your inseam measurement? Are you measuring from center of bottom bracket to top of the saddle following your seat tube?

Pants inseam is anywhere from 32-34", depending on which make/model jeans I'm buying. Don't know what an actual accurate measurement of my inseam is because I probably only ever took one once, when ordering a custom bike, and I don't have that data handy here.
Saddle height is 763mm from the bottom bracket, and I use 175mm crank arms.
