A former teammate swears by eating sausage before all races, he says a little grease is good for him. He's a pretty decent cat2. If I ate greasy bacon or sausage before a race, bad things would happen.

Everyone is different. You have to learn what works for you and don't change it on race day.
A three hour race is not a big deal. You don't need to carbo load for it or eat all that food.
Four hours before the race is too early to eat breakfast, unless you have to get up that early to drive there. In that case I'd need some more food before my warmup to make sure I am topped up. But a protein shake? Bad idea for me.

Depending on the start time I have my usual breakfast (oatmeal or bagel with pb) and 2-3 hours before race time I have a poptart...(banana split flavor for important races)...then a red bull about an hour before start time...how fast you want to go is directly proportional to the rarity of the poptart flavor...so for a B race strawberry is fine...

I've had bacon before a race.... and love it, bfd. Squish it in a napkin to get out the extra grease, and enjoy.

OP, Chris Carmichael wrote a decent book on nutrition for athletes called, _Food for Fitness_, you should check it out (It contains a lot of annoying references to PowerBar, but otherwise it's pretty good).
