700x40 Michelin Protek Cross Max, heavy duty puncture resistant tires with a chevron pattern tread that's a good compromise for paved roads and unpaved trails, grass, etc. Heavy at 1,110 grams, but my bike is heavy and I'm slow so it suits my preferences. I don't do any stunts and average only 12 mph regardless of the bike so my priority is a stable ride and not falling down when I venture off road.
I tried a Trek 7.5 fx a few months ago and while I liked the bike pretty well I didn't care for the skinny road oriented tires. First thing I'd do is put on something a bit wider with a bit more grip to handle the mixed terrain I like to ride.

I have Crossroads Armadillo 700x38 on my Giant Escape. I wore out the back tire pretty quickly that came on with the bike and wanted something that would last longer and be more resistant to flats.

I took the Specialized stock tires off my Sirrus and replaced them with Forte AMR+ 25's for the summer - basically a slick tire, minimal tread pattern. Works fine for the summer for my conditions, almost all pavement, with a few miles of well-groomed, packed crushed limestone trails in the local park. Cheap too - $20 each on sale.
However, they gotta come off in October, I wouldn't want to hit a patch of ice with them.

Schwalbe Mondials 50-622 on a Specialized Crosstrail Elite.
I prefer them over the stock 38mm Trigger Sport tires. I think the biggest difference is the air pressure, about 40f/45r psi vs 70f/80r psi. Less skitter on gravel, less buzz on crushed limestone, and they seem harder to deflect.

My bike came with 700 x 28's, and I see no need to change to larger or smaller. I get along OK on gravel (as long as it's not big honking golfball-sized rocks) so not really any need to go larger, and the 28's are narrow enough to provide little rolling resistance.

I've got about 1500 miles on my original equipment Vera CityWide 700x32's on my Fuji Absolute. I think I can get another 200-300 miles on them to be honest!

Stock Kenda Kwick-Trax 700x32c tires. Not sure if going to a 35c or staying with the 32's. I like how the 32's roll and feel overall.

Kevlar belted Nashbar 700 x 35 Transitions. I've been really happy with them. I also have a bike with stock 700 x 35 Kenda Kwik-Trax that seem fine so far, but I only ride on good road surfaces with this bike.

Only one size smaller but it's amazing how much of a difference it makes. the 7.3 just feels like a whole different animal simply with the different tire width.

Schwalbe Marathon Original Green Guard in 700 x 32.
Fastest, smoothest 32mm tire I've ever had on the hybrid, and no flats (yet, knock wood).
I can't say enough good things about them, plus they're cheap...<$20 if ordered from the U.K.

Giant Escape's 700x32's stock then to Bontrager AW 700x28's....what a difference, acceleration much improved, gained 2 - 3 mph top speed but a much harsher ride. About to put on Conti GP 4000s II Reflex 700x28.....

Basic cheapy Vittoria Zaffiro 700x28 on my Jamis Coda Comp. I'm 250#, ride half on roads, half on gravel trails, keep 'em at 110 psi front and back, and basically never get flats.

They should be excellent tyres.
I suspect a tyre like that will be far more popular on a road bike than a hybrid, but they will be awesome on a hybrid too, if one didn't want tyres bigger than 28mm.
