I'm 5'8" with a 33" biking inseam. My bikes range from 53cm to 56cm. I do have a 57cm Fuji that was converted to a 650b setup so it's not tall enough to be a problem now.
More importantly, all bikes have the same saddle height from the BB of 29 1/2 inches, the same setback from the BB of 8 3/8 inches and the same reach from the center of the saddle to the handlebars. The only difference may be an inch or so in the drop from the saddle to the bars.

I am 6 foot (+)… and I ride a 56cm (I have 3). Partly because I have a longer (taller) torso and am not long legged. And partly because I am arthritic and can't really fully stretch out.

I am 5'10", inseam 31/32" I am a little longer in the torso. My bikes include Trek Domane at 54cm, Giant Defy Advanced at 56cm, Trek fx7.3 at 17.5 inches
trek fx is a bit small, 19 inches would have been better, but that was my first bike i bought and I was too cautious regarding stand over height.
Trek Domane 54cm fit better than a 56cm when I bought it.
Giant 56cm bike I like a lot as i can stretch out to the handlebars farther than the Domane. Its a more comfortable riding bike, but that isn't to say or imply the Domane is uncomfortable.

Doesn’t it really depend on brand? 61cm Trek is not a 61cm Specialized?
That said, I’m 6’7 with a large wingspan and shortish legs. I’m currently on a 23” Trek X-Cal, and was riding a 56cm Ridley X-Fire until I was hit and it and I were broken.
Have a 63cm Bianchi in order. Yay random sizes!!!

My 29er hardtail has a 17.5" frame. I'm 5'10"... and this frame size is for somebody in the 5'6"-5'8" height range. For some reason the smaller frame felt more natural and comfortable on a 29er mountain bike than the 18.5" or 19.5" frames. My old 26er mountain bike has a 19" frame.

In my youth I was about 5'10 1/2". These days I'm 5'9" on a good morning. Still have a 32" inseam. I can ride 54-58 cm. Perfect is 55-56 cm w/100 cm stem. Back in the day the pros would ride the smallest frame they could fit because they were lighter. FWIW.

I'm 6'6" tall with a 36" inseam. I ride an '84 Peugeot bought new. The frame is 25 inches from the center of the crank to the top of the top tube. Sorry I don't know the metric equivalent. Back in the day we used inch measurements, not metric-after all this is the USA, not Europe.

In my athletic youth, I claimed to be 5' 8", but really topped out at 5' 7 1/2". Nearly an octogenarian, I claimed 5' 6" for years, but my last doctor visit found me slipping below 5' 5".
My inseam is unchanged at 32 1/2", and by manipulating seat post and stem, I comfortably ride frames 52cm to 56 cm.(smallest and largest bikes in my fleet) The 52cm frame has a 55 cm TT.
Majority of my bikes are sized 53cm-54cm. Because my parents always bought larger sizes expecting we would "grow into them", I preferred an "Eddie or French Fit" for maximum efforts. Now, it takes me an hour or so of riding to get stretched out and fully comfortable. Don

I'm definitely an oddity - 5'7", and I'm most comfortable on a 56 cm frame. I know that sounds ridiculously big for my height, but I genuinely feel cramped on a 54 and feel properly relaxed and appropriately stretched out on a 56.
I've got a 56 cm Scott road bike, a 56 cm Specialized Diverge, and a medium AWOL (which has about the same reach as the Scott). And I've comfortably ridden the Scott and AWOL for hours at a time. I haven't owned the Diverge long enough to see how I fare over a long ride, but it feels like it fits perfectly and certainly fit better than the 54 I tried out.

I'm 178 cm which is almost 5'10, I got a 54 diverge expert and found my legs cramped inside the bike with my toes occasionally in the way of front tires however upper body was stretched. Unfortunately got into an accident and cracked my frame now I've ordered size 56 online and waiting for it to arrive. Quite nervous regarding the fit, could you spare a thought on what kind of fit problems I may encounter?
