This may sound crazy, but what about leather soled dress shoes w/ some thin gel-type insoles? The leather sole would provide a pretty good semi-stiff platform without being thick and it won't snag on the pedal coming out of the clips. If you wanted a little extra grip you could put some cross-hatching on the soles with the edge of a straight file. (that's what folks used to do with their shoes)
