ok, if you wanna go meat 'n potatoes metal, AT THE GATES: SLAUGHTER OF THE SOUL.
its really hard to top that album as far as straight up "metal" goes.
its much more thrash, but Slayer's Reign In Blood is a must have as well.
for more modern stuff, Darkest Hour's "Hidden Hands of a Sadist Nation" is incredible, and personally, The Black Dahlia Murder's "Unhallowed" is a favorite (i love the new album too. definitely recommended.)
its hard not to get really biased about this stuff. "Jane Doe" is probably my favorite album of all time, but i dunno if it qualifies for the "metal" list. its all subjective as to how/why you bracket things into genres.
i'm a huge grindcore fan.

I've been into Whitechapel recently, https://whitechapelmetal.com/ About the only metal band that's been brutal enough. Lyrics can't hear them but the growling vocals are perferct in my opinion. Super heavy, one guitarist has a 9 string so he can tune real low, not sure how low it is but it's wonderful.

but yeah i feel like a lot of the bands are not really metal, but i love them regardless, if we're talking dystopia and crust i can't believe this thread has gone so long with out mentioning his hero is gone. but yeah i also second kreator.

there's a certain amount of overlap between metal, thrash, grindcore, crust, hardcore, etc...sometimes it's best not to worry about what the labels are, but more important to just rock out.
