the easiest is: fixed, super high gear ratio (for easy manuverability), drops (contol), clipless pedals (wouldnt wanna slip out!) and a driver (golf club) will do the trick

Super high 52/11 or super-high 32/20? And dropbars, really? I can't imagine riding around in tight spaces, making big corrections, and leaning forward that much, especially while trying to weild a mallet.
Also, how much of an issue is toe overlap?
... and how would a fixed 29er at 32/18 fare?

Prolly not drop bars. I use a shorter riser/straight bar.
Toe overlap can become an issue if you are riding fixed, but you can learn to compensate like anywhere else.
That fixed 29er would prolly fare well. Remember, don't ride anything that you'd miss if it gets thrashed.
