If you're using friction shifters, you can use pretty much anything back there. I picked up a pair of old dura-ace hubs laced to MA-40s for forty bucks, and they're treating me pretty well. Do you know if her bike is spaced at 126 or 130 in the back?

You can put any shimano splined 7 speed cassette on any shimano splined 7+ speed freehub body.

So happy I found this thread. I'm looking for a geared bike, but really want something with a high bb and tight "geo" like a track bike. Something suited to short, fast sprints and tight turning rather than long distances like a traditional road bike. I don't even know where to start. Is there a certain class of frame that covers this? A criterium frame? Can anyone point me in a good direction to start my research? My budget is about $1000 - $1500, would consider new or used.

Google "criterium frame geometry" to get you started. Shorter chainstays, steeper headtube and seattube.
Check eBay for racing frames from the 80's. Columbus SL tubing or similar. Might get something like this for less than $150-$200. Italian bikes or those with Italian frame design (top tube and seat tube are the same length)

And every style of bike has a completely different geometry that each builder has a different take on.
A crit frame is what you described though. Some vintage (non pursuit) TT bikes might fit the bill too.
The vintage Cannondales that D1MF has posted are right up your ally.
