This current "low spoke/need to make my wheels as light as possible" fad is a little ridiculous.

So reducing spoke count is going to shave off, what, maybe 10g each? You could get the same weight savings by removing loose change from your pockets, or buy picking up a lighter tire if you're obsessed with rotational weight. Neither of these options will compromise the strength of your wheels.

Is it considered jackass to ride with a deep profile rim in the back, and a shallower one in the front? Having a deep v, or something similar on the front for someone who isn't a Clydesdale just seems excessive (though I suppose it could be argued that deep v's are excessive in general)

Definitely not a jackass build, but why did you go with a deeper rim in the back? From what you said earlier, she's a lightweight, so I wouldn't think she needed the strength of a Deep V in the back. Just wondering.

today I acquired some white cinelli mash tape, the one that has all of the lines on it that kinda looks like a map.
should I put it on my all city or my jamis? both bikes could use it but neither necessarily needs it. for pictures of the bikes please refer to pedalroom, i think there is a link in my sig. thank you

I've been scouring the internet looking for somebody else that's weighed them to no avail. Sun doesn't even list the rim on their website or I would've just calculated it myself.

Sorry man...it's been a hectic day. I think they're a little heavier than you want:
front = 1009g, rear = 1005g (with rim tape and track nuts)
front = 1009g, rear = 1005g (with rim tape and track nuts)
